50ml Renais

20ml Lime Juice

1 Whole Passionfruit

20ml Orange Juice

20ml Sugar Syrup

25ml Double Cream

20ml Egg Whites

Guava Soda

POG Ramos

Step 1:

Add all your ingredients to your shaker asides from the guava soda and shake as hard as you can. 

Step 2:

Double strain into a tall collins glass then place the glass in the freezer for approximately one minute. 

Step 3:

Top the glass with guava soda so that a meringue-esque foam rises above the glass. Garnish with your choice of garnish and serve!
